Update Docs 12/3/22

Updating documents is always going to be an ongoing issue with sweeping changes, but it doesn't mean it should be completely ignored.

Periodically a good idea to just go ahead and update/write new docs.

Could be an ongoing issue and adding/updating a checklist or set up some small checklist items to knock them out.

• Deployment using helm
• Using skaffold for development and deployment
  • Using the different profiles
  • Different arguments to the ./build.sh file
• README.md inside the charts on how to use and the values
